USDA Choice or Higher Beef Ribeye Lip-On Steak Beef Fat Added - 12 oz. is further processed by Two Rivers' patented all-natural enhancement containing beef, water, beef fat, and salt. This allows for the end user to have a consistent Upper 2/3 Choice level eating experience without the elevated and fluctuating prices of the graded market. • Comes in 14 steaks per box • Cryovaced . • 12-ounce steak weight average with natural animal variation • 100% useable product • The boneless ribeye steaks, lip-on shall be prepared from a rib item meeting the end requirements of Item No. 112A. • The lip shall be cut on the short rib side with a straight cut that is ventral to, but no more than 1.0 inches from the longissimus dorsi, leaving the lip firmly attached. • Place frozen product in a 33 – 40° F cooler for 12 – 24 hours or until soft to touch. • Store in a freezer for up to 350 days after packed date or 10 days after slacked date at 27 - 33°F. • Store in a freezer below 28°F or cooler up to 33°F. • Increase Palatability w/o Increasing Cost (i.e., Palatability = Tenderness; Juiciness; and Flavor) • Two Rivers is an All-Natural Enhancement that uses only Beef, Water, Beef Fat, and Salt in our process. • Aging not required since we elevate the tenderness through our patented technology of introducing the marble enrichment and simple salt-water solution.
