These Wholesome Farms Extra-Large Eggs are “loose” packed, fresh in-shell white chicken eggs and are a natural source of vitamins, essential amino acids, and high-quality protein. • Contain 30 eggs  per case • Loose packed on pulp trays in a corrugated box • Extra-Large, characteristic smooth “egg shape” • Yield 180 eggs (6 trays of 30 eggs each) • USDA grade AA • Eggs are key components in a wide variety of recipes and are easy to cook and serve • When handling eggs, always wash hands thoroughly before and after • If "pooling" eggs, never add additional eggs to an existing pool and never allow eggs that have been pooled for more than an hour to be used • Always use clean, dry, sanitized utensils and equipment. Thoroughly wash all containers and utensils after each use • Cook eggs thoroughly • Store shell eggs at or below 45°F; do not freeze • Store shell eggs in their case • Store away from foods with strong odors such as fish, bananas, apples, cabbage, or onions. Never store eggs near chemicals of any kind • Keep eggs away from heat sources to maintain quality • Follow safe handling practices, discard broken or leaking eggs, and rotate first in/first out – Always • Keep cold egg dishes below 40°F and hot dishes above 140°F. Do not leave egg dishes at room temperature for more than 60 minutes including preparation and serving time • Cracked eggs may be unsafe and should not be used, whether they are leaking or not • To prevent illness from bacteria: keep eggs refrigerated, cook eggs until yolks are firm, and cook foods containing eggs thoroughly ,Eggs can provide structure, flavor, and nutrients.
